1 cup (2 sticks) unsalted butter, cold and cubed
6-8 tablespoons ice water

6-8 medium-sized apples (such as Granny Smith, Honeycrisp, or a mix), peeled, cored, and sliced
3/4 cup granulated sugar
1 tablespoon lemon juice (freshly squeezed)
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
